Subject :changing carrot cake recipe..

I want to change a wonderful carrot cake recipe I have but I do not want to change anything except to add a can of crushed pineapple..
The recipe is as follows...
2 cups sugar 4 eggs
1 tsp salt 1 ? cups raisins
2 cups sr flour 1 ? cups oil
4 heaping teaspoons of cinnamon
1 teaspoon vanilla
2 Lbs grated carrots (hand grated..as the food processor does not make the carrots the right size..too chunky and too wet...)
Beat sugar and Oil and eggs vanilla together....
add remaining ingredients and fruits..Pour into at least a 13 x 9 baking dish...I use a lasagna pan as it makes it bake faster and make a \"larger\" cake...
Bake at 350? for 40 min or so..
after it has cooled then ice with Cream cheese icing..
2 lrg. boxes cream cheese (room temp.)
1 box xx sugar
? cup butter softened
2 tsp vanilla
mix together and ice the cake...
Ok....how do I add a can of crushed pineapple to this recipe without changing anything except adding the pineapple..
It is going to be too moist if I don\'t make some kind of change...
? cup more flour ...would that added to it fix it?
Somehow I just don\'t think it will and do not want to ruin the cake in the trying it...
Any cooks out there who know how to add liquid without ruining the recipe?

Drain the crushed pineapple very well, perhaps even pressing the juice from the pineapple. This should work, I have done similiar. |

I appreciate it...
I was hoping to have the added flavor of the juice but I guess I will just have to settle for the fruit..
..
I will not be making it for a couple of weeks but when I do I will post what happened..
I am making it for a going away part for my son and his wife..
they are moving out of state..
sigh...I will miss my kiddo..

Well, I didn\'t get to use the pineapple after all..
My son does not like pineapple so I am going to have to
wait a while longer to see how it works..
I am patient...

Hey, Moms...
There must have been some misunderstanding about the pineapple. I love pineapple so long as it\'s fresh. Canned, cooked, or somehow fallen onto a perfectly good pizza is a tragedy... A pineapple is a terrible thing to waste. :))
BTW... I just thinking about your carrott cakes the other day. Funny this message was in here. You\'re carrot cake recipe totally rocks.
And just to let you know, your \"kiddo\" misses you too.
